Dad's (1950's?) Chinese-Hawaiian BBQ Ribs

Great as an appetizer.

2 1/2 lb. pork spareribs

1 inch fresh ginger root

1 clove garlic

1/2 cup soy sauce

3/4 cup brown sugar

1/2 cup catsup

1/4 cup dry sherry

 

Have butcher saw ribs in half. Cut ribs into bite sized ("one bone") pieces.

Crush or finely chop ginger and garlic. Add soy sauce, sugar, catsup and sherry and mix well. Rub marinade into meat. Marinate 3 hours or overnight.

Bake for 1 1/2 hours at 350 degrees in a 15 X 10 or so pan. If baked in a glass dish, ribs will become glazed and sticky, if baked in a metal dish, baking liquid is more a braise and so ribs are not sticky- your preference.
